How to make a refreshing welcome drink

There is nothing nicer if you have guests coming to stay to greet them with a refreshing drink that will get them straight into the holiday mood. Here is out take on a classic which makes use of the fresh lemons that grow in the garden. If there are none on the tree – just ask a neighbour. The Casa Uno Collins is cool, refreshing and very very drinkable – so beware !! It is simple to make and with a little preplanning can be put together in less than 5 minutes.   Ingredients To make the Casa Uno Collins you will need the following ingredients – you can follow our measures below or make and adjust to your own taste – we do !!! The Juice of 2 / 3 fresh lemons London Dry Gin 150 ml Limoncello 150 ml Sugar Syrup 100 ml Soda Water 300 ml Lots of Ice – available from the local shop or bar

Refreshing Casa Uno Collins

Method The Sugar Syrup will need to be made and ideally this should be done the day before your guests arrive.  Put approximately 100 grams of sugar into a saucepan and add approximately 250 ml of water. Slowly bring to the boil. This will cause the sugar to dissolve. Reduce the mixture to approximately half of the original quantity. Remove from the heat and allow to call. Once cool store in the fridge until ready to use. Squeeze the lemons (save one to garnish the drink) and pour the juice into a large serving jug. Top up with the Gin and Limoncello (we find the 50 / 50 mix is best) add the sugar syrup and stir. Add a large quantity of ice to the jug and fill to the top. Stir gently making sure you don’t spill any of the precious fluid. Take some long tall glasses and fill with ice. Pour the Collins into the glass and add a sliced round of lemon to the side of the glass to garnish. You can now sit down with your guests and plan the rest of your day.
